This is calorically strategic and palatably pleasing way to begin the day.
1 1/2 tbsp olive oil
1 large handful of baby spinach
1/4 cup red onion, finely chopped
1 tbsp garlic, minced
1 or 2 eggs
1/2 cup precooked chilled Beulah Land Tan, Medley, or Missimati Bayou Bouquet Fragrant Brown Rice
Heat oil in medium sauté pan and add garlic and onions. Just before onions begin to become translucent, add rice and sauté until warmed. Add spinach and sauté until wilted. Scoot everything to side of pan with spatula, and add your egg(s), beaten if you prefer scrambled. When eggs cooked to desired doneness, plate with egg placed in center of spinach. Enjoy!
