TWO BROOKS MORNING MANNA RICE BOWL

This a simple, healthy, and nutritious way to treat your children and yourself to morning victuals that are high energy and low calorie. As we say on our place, “this food will hold you up for a while”. Our brown rice’s slowly released, high resistant starch carbohydrates, along with the egg’s protein last through the ante meridiem for a more productive morning. Fiber is provided by the brown rice and spinach, and wasabi peas add a little crunch and flavor. One can flexibly use leftover cold rice, leftover warmed rice, or freshly cooked rice; if serving cold, you may wish to use our Missimati Fragrant Brown Rice. You can poach your eggs, scramble your eggs, or serve them over easy. You can add crumbled bacon, sausage, or diced ham if you need a meat fix. It is especially nice drizzled with honey, but you may prefer a smattering of grated cheese. This is adaptable morning manna.

INGREDIENTS

Per serving

¾ cup cooked Beulah Land Tan, Beulah Land Medley, or Missimati Bayou Bouquet Fragrant Brown Rice

1 egg

¼ cup spinach leaves, cut in strips with ribs removed

Wasabi peas, amount to suit

Paprika

Fresh ground black pepper

Salt

METHOD

Blend spinach into rice. Spinach will cook if placed in hot, fresh cooked rice; otherwise, raw.

Depending on preference, place hot or cold cooked rice in shallow serving bowl. Make an indention in center for egg.

Cook egg according to preference and fashion with salt and pepper. Place in the indention in the rice bowl.

Garnish with paprika, and sprinkle wasabi peas to please. Enjoy!
